Evaporation takes place when the particles of liquid at the surface change into gas phase.

It is a surface phenomenon as only the liquid particles at the surface gain enough energy to break free from the rest of the liquid to escape into a gaseous phase.

The bulk of the liquid remains relatively unaffected in the process.
