What is Rancidity? How is it caused?

The spoilage of food in such a way that it becomes unfit to eat is called rancidity.

It is caused by oxidation of fats and oils present in food.

It causes change in smell and taste of food

 

 

How to Prevent Rancidity

It can be prevented by preventing oxidation. 

 

           The following methods may be used:

 

  1. Adding antioxidants to food
    Antioxidants are substances which prevent oxidation.
    Example: Phenolic compounds like Butylated hydroxyanisole (BHA) and Butylated                   Hydroxytoluene (BHT)

  2. Keeping food in refrigerator
    Refrigerator has low temperature, oxidation slows down at low temperatures

  3. Storing food in airtight containers
    In Airtight container,there is little exposure to oxygen,so there is low oxidation

  4. Keeping food away from light
    In absence of light, oxidation  process slows down

  5. Packaging food and oil in Nitrogen Gas
    Bags of chips are flushed with Nitrogen
    The Nitrogen gas prevents Oxygen from reaching the food and prevents oxidation
